She ran a fever for a couple of days and she just didn't seem to feel well at all. Getting a good nights sleep has not come easy lately. This was one evening this week were she and Dad crashed they were both so tired! I just thought it was sweet. Charly sure loves her Dad, she loves it when he gets home she gives him big hugs and cuddles and says Da Da! And Dad just says yep she knows how to wrap me around her little finger!
OK I have been craving Quinoa lately and went searching for some recipes. Well in the picture above there is a Vegtable Quinoa Pilaf that wasn't really all that good did not make it to the favorites;) But the sandwich by it we really thought was pretty Tasty! So here is the recipe. (And yes I'm still looking for some good quinoa recipes cause I love the taste of quinoa I just don't know of very many ways to use it)
Avocado Herb Sandwich
2 Slices Bread (we just used whole wheat cause that is what we had, would be really good with a multi-grain or maybe one of those that has the sunflower seeds)
1/2 -1 Large Organic Hass Avocado
3 Stems of Fresh Dill (I didn't have fresh so I just sprinkled some dry)
1 Large Green Onion
3 Leaves Basil Leaves (again didn't have fresh just sprinkled some dry but want to try it with the fresh herbs it would be good)
1 Large Organic Tomato
1/2 Cup Arugula Salad Leaves (didn't have these just used some Spring mix)
1/4 Cup Baby Dandelion Leaves (yep picked these in our back yard)
Pinch Celtic Sea Salt
Pinch Black Pepper
1 TB Olive Oil
3 Whole Olives
Start with a thin layer of fresh tomatoes.
Next, pour a light coating of Raw Organic Olive Oil. Then cut up the Avocado.
Next take a fresh green onion leaf and cut it up into little pieces and sprinkle it onto the top of the Avocado. I do this to make sure the onion stays in place. Most of the onion pieces will stick to the oil and avocado. Next grab you Dandelion leaves and tear them in to smaller pieces and place them on the sandwich. I was surprised these were actually good on the sandwich and I think added to the flavor;)
Now take the rest of your leaves and place them on the sandwich. This includes the basil leaves, Arugula, and the Fresh Dill. Lastly take a few olives and thinly slice them and place them in. Now to finish it off, just sprinkle a little celtic salt and black pepper.
That's it. This really takes only about 5 minutes at most.
OK now if that wasn't Tasty enough! You have all got to try this! Oh it was wonderful!
Mango Mousse and Berry Pafait
4 Cups Fresh Mangos
4 TB Melted Coconut Oil
1 teaspoon Vanilla
Zest of one small lime
Juice of one small lime
1/2 Cup Agave or Pure Maple Syrup
Pinch of Salt
1 Cup Berries (I used strawberries can use any mixture of fresh berries you want)
Blend all ingredients except for the Berries and a cup of the mango in a food processor or blender until smooth and creamy. I slowly added the melted coconut oil while blender was running so it would mix in well before it started setting up. After it is all mixed and creamy, transfer to a bowl and then Chill it in the fridge for at least 1-2hrs or overnight. Fill the cups with a layer of the mousse, a layer of fresh sliced mango, then another layer of the mousse, then a layer of fresh berries and so on until full. Top with a layer of fruit and fresh mint leaves.
This is so good an instant favorite!

OH dang, no fun when kids don't feel good! I love your creative idea of putting her at the piano. She looks like a natural there. That dessert looks sooooo tasty! You are so awesome to be able to come up with such tasty and healthy eats!

what a precious little musician! I hope she is feeling better and those toothies are about in. Those recipes do look yummy. Only thing is it is hard to find good mangoes. Dandelions, however are always in plentiful supply. Sounds yummy. Love to all of you.
The food looks great! I am trying new things all the time. This week is Aunt Tammies hashbrowns. Next week I don't know yet.
